The short answer

eBay inventory management software keeps the quantity on each eBay listing accurate and tells you when to restock. At minimum it syncs stock between eBay and your other channels so a unit sold on Shopify or Amazon comes off eBay immediately, which prevents out-of-stock cancellations that count against your seller performance.
